The normal excel extension is .xls
Which software are you using and are you trying to scan a picture or text, since the latter will need to be converted after scanning using an ocr package.
Some software, such as PaperPort, include the ocr automatically, when scanning text into Notepad, Word, Excel etc. Others will require a separate ocr package.

As suggested earlier an OCR (optical character recognition) enabled software is required. But this is generally bundled on a CD with the scanner itself. You can download one from here (http://www.irisusa.com/youreview/demo.html) .
You can scan the image into a document and them export it to Excel.
