Spicy Thai Cole Slaw

1 bottle of Thai Peanut refrigerated salad dressing or similar oriental dressing
1 pound cole slaw cabbage and carrots in bag (or cut up your own)
1 10 ounce box of currants (claims to be 2 cups)
1/2 medium bermuda onion chopped
1/2 English cucumber chopped
1 cup chopped pecans
about 1 and 1/2 teaspoon minced garlic

I also used a little bit of rice vinegar to thin out the last of the salad dressing to get it out of the bottle. Mix it all together well being careful to distribute the salad dressing evenly. Add curry powder as you would like. Serve cold.

Spicy Chocolate Gobbler Chili - 2006

Portions are approximate and reconstructed from memory.

Prepare a baking pan of at least a quart with some olive oil to bake these ingredients for about an hour (until mostly browned) at about 400 degrees:

1 chopped Bermuda onion, medium-large
1 chopped red sweet pepper
4 chopped jalapeno peppers with seeds removed
3 teaspoons chopped garlic
8 oz. shredded carrots
4 stalks chopped celery
3 teaspoons of prepared chopped jalapeno peppers
3 oz. dried currants


While that is cooking take 2 pounds of lean ground turkey and microwave in a closed dish for 2-minute increments until thoroughly cooked. Chop it up initially and keep chopping it up between cooking episodes so that it is loose. Drain liquid before adding to crockpot.

Put these ingredients in a crockpot and turn on the heat to high:

30 ounces tomato sauce
15 ounces prepared black beans
15 ounces prepared mixed chili beans
12 ounces hot salsa
3 ounces dried currants (6 oz. total)
1 tablespoon curry powder
2 tablespoon chili powder
1 teaspoon cayenne powder
1 teaspoon ground cumin
1 teaspoon Cajun seasoning
½ teaspoon cinnamon
10 ounces Walden No Calorie Chocolate Syrup
1 teaspoon vanilla extract

Stir thoroughly. Add baked ingredients and turkey. Cover and cook on high for at least 2 hours stirring occasionally. Switch to low setting to keep hot and serve.

Note: if I did this recipe again, I would use chopped fresh cranberries instead of currants to make it less sweet.
