My brother has asked me to upgrade his laptop. Is replacing the processor and adding more ram the same as upgrading a normal home pc?

In other words, can I simply open the case up and install new bits?

Like a normal PC? not really, Laptop parts aside from RAM are not generally as prevalent as PC parts, and pulling a laptop apart can be considerably more work.

The RAM is normally under a fairly easy to remove panel (will depend on ;laptop model) and can just be swapped out, but the processor may not be so simple.

So I can change the ram without opening it all up then - great.

I think 512mb instead of 256mb will probably make a huge difference anyway so wont bother with processor.

It depends on the brand/model of notebook as to how easily RAM is accessed. Most just have a panel to access it, some have to have the keyboard removed to access it.
What brand/model is the brother's?
