Yes, I know this is a PC forum, but with the nonsense that's going on with the Vista EULA, I'm seriously looking at Macs for the first time in my life. Honestly, the only reason I haven't had one before was the fact that you don't build them yourself.

With the switch to Intel processors, has this changed any at all? Do you still have to buy them pre-built or can you get Mac parts and build your own?

The CPU has internal features specific for Apple, so you cannot "build your own", still proprietary.
Otherwise don't you think the big OEMs like Dell and HP would be salivating at selling Intel Mac compatibles and getting healthy undercutting Apple's large profit margins?

Plus the BIOS/Firmware is Apple owned/controlled.

I have those same issues with Vista myself. I've also heard stories that Vista won't play your music or movies unless it can verify that you have a legal copy. So what happens when your legal copy can't be verified, such as older CDs? I don't know how true any of this is though. I don't plan on switching to Vista myself. I'm going to stick with XP for now. If I have to switch in the future it will be to Linux.

Yeah... even though I am *sigh* a gamer and will probably end up switching to Vista someday, I'm not going to be doing it anytime soon. I won't switch until I absolutely have to. I'll just dualboot to Vista (solely for gaming) and Linux. Problem solved.

No, you still cannot built the mac yourself. But, if you take a look in the apple store (http://store.apple.com/1-800-MY-APPLE/WebObjects/AppleStore.woa) and choose the PowerMac, you have much options to configure your own Mac PLUS it will be built and shippped for free in 24 hours, they say :)
