It;s to clear up any magnetic anomalies that may occur in your screen...you ever stick a magnet next to a tv? Don't do it, but trust me, it looks pretty cool, until you realize that the funky colors don't go away...degauss fixes stuff like that (to a certain degree)
Quoting AOL (http://aol.pcwebopedia.com/TERM/d/degauss.html):
"External magnetic forces -- such as the earth's natural magnetism or a magnet placed close to the monitor -- can magnetize the shadow mask, causing distorted images and colors.
To remove this external magnetic force, most monitors automatically degauss the CRT whenever you turn on the monitor. In addition, many monitors have a manual degauss button that performs a more thorough degaussing of the CRT. You can also use an external degausser that degausses the monitor from the outside. Since it may be impossible to remove the external magnetic force, degaussing works by re-aligning the magnetic fields inside the CRT to compensate for the external magnetism."

Hi,
Your crt (picture tube) has 3 different colours of phosphors just on the inside of it red, green, and blue. When these a struck by an electron they will emit the correspondind colour. Also just behind the phosphors is a screen called a shadow mask, there are different types of constructions but all serve the same purpose. Just look at this as a as screen from your window. The holes are aligned so that when an electron is shot out it hits the appropriate colour of phosphor. So if this screen gets magnitized the screen gets warped then the electron hits the wrong phosphor and an impurity will occur. The effect of this is if you were suppose to have a complete white screen it will have blotches of red, green or blue. Therefore, the purpose of degaussing is to "straighten" the shadow mask and re-aligne it. With just changing the monitor from lets say south facing to east facing or a child with a magnet putting it on the face of the tube (do not do this child's trick as it can permanently warp the mask). Thus the degauss button on the monitor. After saying all this if you have a powerful degausssing coil within the monitor as by your description I WOULD NOT use this on a regular basis, use it only if you notice a discolourization.

Excelent link Reid, especially when you read through the "see also".

P.S. I have to learn to type faster as when I started my original post there was no replies and do you have any cures for two finger burning(hehe).
I thought my post was hanging, but I think all three of us were posting at the same time. There were no replies when I started too.

Howdy
Cool posts.
For those who like to know why things are nammed what they are:
gauss \Gauss\ (gous), n. [So named after Karl F. Gauss, a German mathematician.] (Elec.) The C.G.S. unit of density of magnetic field, equal to a field of one line of force per square centimeter, being thus adopted as an international unit at Paris in 1900; sometimes used as a unit of intensity of magnetic field. It was previously suggested as a unit of magnetomotive force.
Also, some monitors degauss every time they come on, such as Sony.
I do not think this will harm your monitor as suggested. Laters...
