is there any free/cheap software that would allow me to create a user, Then allow them to login to any one of our workstations, able to view their documents & such.

No servers per se. EDIT: i have 1 main pc connected to wireless router, which has files that ALL the others need (shared drive somehow)
2 Windows XP Home - 1 is wireless
1 XP Media Center - wireless
2 Printers - 1 is wireless
2 Windows XP Home - 1 is wireless
1 XP Media Center - wireless
This is going to be a problem for you. Only Windows XP Pro can join a domain, and basically what you want to do is create a domain setup. Without a domain there is no centralized authentication.
A kind of work around is to create all of the same accounts on all of the computers. This can become a headache though if you need to change passwords or users at all.

We have it setup this way now, it is a pain. There is no software available that will do this?

we have it setup with the same username & password, manually created on each computer. If someone changes their password on one, they will have to go into each of the other ones & manually create it. Also, the My Documents are not shared between them

No, a local Windows logon will not replicate its password to other Windows computers on its own.
Try this Changing local passwords, en masse (http://www.scriptinganswers.com/vault/Security/) which does a "mass password change" across different computers. This is about the best you can do for easy of account management without a domain.
Note you will have to edit the "administrator" to the name of the account you want to use.
