If you are building a machine to primarily be used for gaming...then yes, you do want a sound card.

Why is that?

When gaming, you are often 'pushing the envelope'. So you want to get the most out of your system as you can...this means using discrete components...video card to do all the video processing; a sound card to do the audio (also, a 'gaming' sound card often has more features than onboard).

Onboard, by nature shares system resources...some of the cheaper implementations actually use the CPU for audio processing! Sound cards, in general, especially gaming level cards, have actual hardware to handle all the processing and don't 'steal' from the rest of the system.
