what is your budget?
If you want a good Nvidia gaming card get the GTX 280 and then for the other two monitors get a cheap 8500gt or any card that has two sockets for Monitors ;)

you want a 3-display span I assume? Not just cloned displays?
As far as I know, few if any games will support anything but a single display.
But for multitrack recording, spanned displays are pretty much required to keep your sanity. Two always worked for me, three would be interesting to see if it's possible.
I can't imagine why you would want 3. If you went into programming, you could use 3, or so I am told. I personally would go crazy. Out of all the programs I've used for recording, aside from Audacity, it would have been nice to have the controls and the waves on seperate screens (I've not used a couple to see if it is doable, but Protools can handle 2.) I have no clue what you would put on the third screen.
If you were spanning the screens...then you could have the waveform view large enough to actually see some detail and see more than fractions of a second without going blind.
